Whiskey Distillery Shoots for Fall Opening in Lake Zurich

Lake Zurich village board approved amendment and special use permit allowing Copper Fiddle Distillery to move forward.

The Copper Fiddle Distillery is expected to be open in the fall, according to the owners of the craft whiskey distillery, proposed for a site on Rte. 22, just east of Rte. 12.

The Lake Zurich village board approved an amendment to its zoning code and a special use permit allowing manufacturing of beverages, Monday evening.

Fred Robinson, partner of the Copper Fiddle along with Jose Hernandez, explained that the distillery still needs to go through federal and state permitting.

"We're looking at maybe early fall," Robinson told the village board. "Jose got some recipes and we think by Thanksgiving its' going to be a wonderful Christmas," he said.

"The inspiration for the Copper Fiddle name comes from my Father-In-Laws 107 year old fiddle that was handed down through the family. It is a fiddle that was hand crafted and made in Chicago in 1906. As violins/fiddles age, the music becomes more developed, mellow and sweet, with a greater depth of character; just like our products."
