Lake Zurich Could Be Home to 2nd Distillery in Lake County
Hawthorn Woods entrepreneurs want to bring trendy whisky distillery to Rte. 22.
Lake Zurich’s village board had a positive response to the concept of Copper Fiddle Distillery, a craft distillery being proposed for a site on Rte. 22, just east of Rte. 12.
Hawthorn Woods residents Jose Hernandez and Fred Robinson brought the concept to the village board, Feb. 4, for a courtesy review.
“This is a relatively new industry in the US ; it was eliminated before prohibition and has seen a resurgence in the last five years,” Hernandez told the village board. “It is nothing more than a bakery; we produce the product in the rear and sell it in the front. We use the same ingredients as a bakery, we’re just producing something quite a bit different,” he said.
The Illinois legislature passed a law in 2010 allowing craft distillers to apply for a state license liquor license and allowing them to sell the alcohol they produce at their distillery.
Ilinois craft distillers are limited to producing up to 15,000 gallons of distilled spirits per year.
Hernandez said Copper Fiddle Distillery would be the ninth distillery in Illinois and the second in Lake County (there is a distillery in Lake Bluff).
The distillery would offer tours and tastings onsite at 532 Rte. 22. The business would also sell specialty barware and accessories. The distillery would specialize in whiskey.
Trustee Rich Sustich said the distillery could help create Rte. 22 as a destination.
Hernandez said a craft distillery in Lake Zurich could attract craft brewers to the area as well.
“Thank you for bringing this forward to Lake Zurich. It’s these kinds of unique things that separate us from other villages. I’m 100 proof for this,” Trustee Tom Poynton said.
The concept was forwarded to the plan commission and zoning board as it requires a zoning code text amendment and a special use permit. If approved, the business would seek a liquor license and a new liquor license category would need to be created.
According to the American Distilling Institute (ADI), there were roughly 50 micro-distilleries operating in 2005; today there are about 250 spread among 45 states, as stated in Time magazine. “The renaissance has happened to wine, beer, bread, vegetables … even sauerkraut,” ADI President Bill Owens says of the craft revolution. Now, he says, is simply spirits’ turn, with the industry poised to imitate the rise of craft beers that America experienced in the ’90s, according to Time.

Nice business plan but it does not belong in the B1 district next to a children's dance studio. Too bad the Trustees did not research the background of this business model. It is not a bakery.

bill, i wonder why the 12 year old girls are not hanging out across the street at the jewel where they sell hundreds of bottles of hooch per day. probably because there is a state law prohibiting the sale of alcohol to minors.
great idea for lake zurich, and i hope everything goes well for these guys.

The debate has nothing to do with the advantages or disadvantages of a craft distillery. LZ Zoning code does not allow manufacturers in the business district. The 7 other distilleries in the 7 other communities are located in commercial districts. There are many vacant buildings in LZ that can accommodate a manufacturer. Bars, supermarkets and T-Shirt sellers are allowed in the Business District. The real issue is that the Board of Trustees and the Building department have been too easily manipulated by an entrepreneur that seeks to change the zoning code.

Thanks for the clarification, I stand corrected. Besides the residential district Riverside has 2 other zones, Lake Zurich has 8 other zoning districts. With that in mind the Riverside distillery operates in the town’s least restricted district while the LZ distillery is proposed to operate in the business district with the most restrictions. The Village can change the code but the fact is that the distillery does not belong in the B-1 zone.

If getting this business into Lake Zurich requires any changing of the building or zoning codes, these guys might as well go somewhere else. Dan Peterson in the Building Division isn't going to do anything to help them.

Seriously, the anti business friendly attitude of our village idiots (trustees and prez) will force these entrepreneurs to try elsewhere. Prolly end up in Barrington.
I love the concept though. Good luck to those guys.

Somehow, 'unique' and 'Lake Zurich' don't have any connection........... It will be a miracle if the Village doesn't screw this deal up. Aren't we due for another empty, rotting building?? Oh yeah, the awful Greek restaurant is closed....there's a surprise I didn't see coming!!!

Nice to see something like this in town. It will be a great attraction and destination location for out of town visitors. I went to the other distillery in lake bluff a few months ago for a tour and there were people there in the group all the way from Milwaukee. Go for a tour and taste and then go to a local LZ restaurant. What better way to boost business in town.

If Dan Peterson in the Building Division needs to get involved to make changes to the building or zoning codes, this place will never open in LZ.
